SERGE & EVEN'S CAFÉ DE PARIS KOULIBIAC DE SAUMON OR PUFF PASTRY ROASTED SALMON

1 SALMON FILET
BELL PEPPERS 1 OF EACH COLOR (RED, GREEN, & YELLOW)
COOKED WHITE RICE
CHOPPED PARSLEY & CILANTRO
SALT, FRESH GROUND BLACK PEPPER, CUMIN
1 LEMON JUICE
1 PUFF PASTRY SHEET
2 EGGS
1/2 CUP OF OLIVE OIL

PREHEAT OVEN TO 300 DEGREES. JULIENNE ALL YOUR BELL PEPPERS. IN A VERY HOT PAN, COOK THEM ALL IN 1 TABLESPOON OF OLIVE OIL. SEASON THEM WITH SALT, PEPPER, AND CUMIN. LET THEM COOL FOR 5 MINUTES. PLACE PUFF PASTRY ON A SHEET. COVER WITH RICE, SALMON, PEPPERS, HERBS, AND SEASONING. CLOSE PASTRY AND BRUSH WITH EGG (BEAT 2 EGGS IN A MIXIN BOWL) TO SEAL AND ON TOP TO HELP IT BROWN. BAKE IT IN THE OVER FOR 15 MINUTES AT 300 DEGREES.
