Turkey Cakes

 

Ingredients:

1 cup Chicken or turkey mince

3 tablespoons  of sweet relish

 1/4 cup of diced celery

1/4 cup of diced onion

1/4 cup of  bell pepper

3 tablespoon of mayo

1/2 teaspoon of granulated onion

1 teaspoon sugar

2 tablespoon of cilantro

Vegetable and olive oil

3/4  cup of italian seasoned bread crumbs

 

Ingredients for vinaigrette:

1/2 cup - 3/4 cups of Olive oil

1/4 cup of Red wine vinegar

1/4cup  and 1 tablespoon of Honey

1tablespoon of Dijon mustard

(Salt and pepper to taste)

Fresh cranberries

Salad Mix

 

 

 

Cooking instructions

Mince your chicken or Turkey, Add your mayo, bell pepper, granulated onion, cilantro, sugar, celery, italian bread crumbs, sweet relish onion to your minced chicken into a mixing bowl. Add salt and pepper to taste. Now mix all of ingredients together completely. Place in refrigerator for 1-2 hour. Now take a small amount of your mix and roll into a small amount of bread crumbs and make a patty like shape.  Heat up your skillet and once hot enough add tap of olive oil. Add your turkey or chicken patty to the skillet. Cook 3-4 minutes on each side. Once cooked add table spoon vinaigrette  to salad mix with your fresh cranberries place Salad mix to plate, place cakes on plate drizzle vinaigrette on plate.
