Chef Bob's Chicken with Cranberry Ham Sauce

 

2 boneless chicken breasts (pounded thin)

Salt & Pepper

2 T of olive oil

1 cup of Ham (diced)

1 small onion (diced)

½ cup of fresh cranberries

2 T of Brown Sugar

¼ cup of Blueberry Wine (or Red Wine)

2 Green Onions (sliced)

 

Season chicken with salt & pepper, then sauté in olive oil and cook for 2 minutes on both sides. In a separate pan sauté Ham and onions, add cranberries, brown sugar, and wine. Add green onions and pour over chicken.
