
White Chocolate Banana Roll Pudding by Sister Schubert... as prepared on FOX6 Good Day Alabama on November 7, 2011.
4 large eggs, lightly beaten
1 ¼ cups light brown sugar, firmly packed and divided
4 cups half-and-half
1 teaspoon vanilla extract
8 ounces white chocolate morsels
1 package Sister Schubert's Clover leaf rolls, cut into bit-sized pieces
4 tablespoons butter
2 ripe bananas, peeled and cut into ½ inch dice
2 teaspoons sugar mixed with ½ teaspoon cinnamon
Preheat oven to 350 degrees
Butter 9x13 inch baking dish.
Using a large bowl, combine eggs, 1 cup brown sugar, half-and-half and vanilla, stir until well combined. Add chocolate morsels and roll pieces, stirring until bread is completed wet.
Melt butter in small sauté pan; add ¼ cup brown sugar and bananas; cook over heat until sugar melts, approximately 2 minutes. Remove from heat, Stir sautéed bananas into custard mixture and pour into baking dish. Sprinkle with Cinnamon sugar.
Bake until pudding is golden and center is set, approximately 1 hour. If the pudding begins to brown after 40 minutes, shield top with foil and continue baking. Serve warm with vanilla ice cream and chocolate sauce.
