John Cowan's Spinach Artichoke Dip

 

Frozen Spinach

Squeezed

1 Lb

butter

 

2 Tablespoons

onion

1/4" diced

1 cups

 flour

 

2 tablespoons

chicken broth

 

2 cups

 cream cheese 

softened

1/4 lb

Parmesan cheese

grated 

1/2 cups

 steak seasoning

 

1 teaspoon

fresh lemon

 

1 Tablespoon

artichoke pieces

rough chop

1 cup

 

Procedure

1.) Melt butter and sweat onions until clear 

2.) Add flour and stir, cooking for 1 minute

3.) Add chicken broth and bring to a boil. 

4.) Simmer for 2 minutes

5.) Add cream cheese and stir with WIRE WHIP 

6.) Stir until cheese is FULLY incorporated with no lumps

7.) Add Parmesan cheese and steak seasoning, stir well.

8.) Add artichokes and lemon juice, stir well.
