
Good Luck Hoppin' John

The Club
5 pieces diced thick cut bacon
Brown bacon in a sauté or sauce pan large enough to hold all ingredients
2 cloves minced garlic
1/2 cup diced celery
1/2 cup diced yellow and green bell pepper
1/2 cup diced onion
Add above ingredients to pan and sweat for 2-3 minutes
2 cups cooked rice
2 cups cooked blackeye peas
1 cup chopped tomatoes
1 cup cooked collard greens
1/2– 3/4 cup chicken broth
2 teaspoons Creole seasoning or salt
a few dashes of your favorite hot sauce
1/4 cup chopped scallions
Add in the rest of these ingredients until it's all hot and your ready to serve!
