
Everything but the kitchen sink Frittata. Taking leftovers from New Years Eve to make a delicious brunch for the family.
Preheat broiler.
Sauté chopped veggies, onion in butter in a skillet for about 3 minutes until tender and then add 4 eggs.
You can add meat (chopped turkey, chicken, or bacon). You can also add olives.
Reduce heat to low and cover. Cook about 10 minutes until frittata is almost set.
Place skillet under broiler 2 minutes or until top is set.
