Chef Bob's Grilled Pizza

 

 

Pizza Dough:

3 c. bread flour

1 tsp. kosher salt

1 pkg yeast

1 tsp honey

3 tbsp olive oil

1.5 c. water

 

In a large bowl, mix flour & salt.  Make a well in the center, then add yeast, oil, honey & water.  Mix and knead until smooth & elastic dough is achieved.  Lightly oil dough & plastic wrap each one.  Then refrigerate for 5-6 hours.  After making, divide into 4 pieces.

 

Pizza:

1/4 c. pesto

1 large beet (dried, peeled, cooked)

20 basil leaves (5 for each pizza)

1 c. diced tomatoes

1 onion, diced

1/2 c. olives, sliced in half

1/2 c. blue cheese

 

Press out each dough about the size of your hand.  Lightly oil dough.  Grill on each side for 2 min on gas, charcoal, or indoor grill.  Spread pesto thinly on each grilled dough.  Divide beets, basil, tomatoes, onions, olives & cheese.  Place on sheet pan in oven at 500 degrees for 3-5 min, until cheese is melted.
