Johnsonville Chicken Sausage with Red Pepper and Broccoli Rigatoni

1 package Johnsonville Chicken Sausage with Red Peppers

12 oz. uncooked rigatoni

3 cups broccoli florets

1 medium red bell pepper, chopped

½ cup Italian Dressing

Grated Parmesan cheese (optional)

1 Tbs Best Yet Olive Oil

 

Cook rigatoni according to package directions in a large pot; add broccoli during the last 3 minutes of cooking time.

Heat oil in large skillet over medium heat; add the chopped red pepper, sausage and sauté for a couple of minutes.  Add the Italian dressing and heat until heated through.

Drain pasta and broccoli; transfer to a large bowl.  Add the sausage mixture; toss to combine and top with Parmesan cheese if desired.

Serve with Italian bread.

This dish can be served hot or cold.  A great do-ahead and travel well cold.  Makes a great stand alone meal but can also be used as a side dish.
