
Café de Paris's Real French Onion Soup
Good Day Alabama cooking - Jan. 5, 2012
2 tablespoons unsalted butter
2 big onions, sliced
2 bay leaves
salt & pepper
3 tablespoons all purpose flour
2 slices french baguette
2 quarts beef broth
Preheat pan. When it's hot, add butter, onions, bay leaves, salt, & pepper. Let them cook slow until until they brown. Dust onions with flour. Stir so it doesn't burn. Add beef broth and stir. Let it cook slowly for at least 10 minutes. To serve, pour in individual bowls and add 2 slices of french baguette and french gruyere cheese to the top of each. Put in a hot oven for 5 minutes to toast the break and melt the cheese.
