
Chef Bob's Alabama Wood Duck
2-4 Alabama wood ducks (prepped)
1 onion
4 cloves garlic
1 orange (zest & juice)
1 apple (diced)
4 tablespoons olive oil
2 Tablespoons apple cider vinegar
4 Tablespoons fresh basil (torn)
Salt & pepper
Mix all ingredients into a bowl with tight fitting lid. Marinate duck for 2-4 hours. Grill or pan sear duck 2-3 minutes per side.
Do not overcook wild duck, it will taste like liver. Keep it rare to medium rare. For whole duck, stuff pieces of garlic, onion, apple and orange into cavity. Sprinkle with salt. Roast in hot oven 375* for 12-15 minutes.
