Chef Bob's Curry Couscous

 

2 1/2 cups couscous

3 cups chicken stock or (vegetable stock)

1 Tablespoon olive oil

1 teaspoon salt

1 teaspoon curry powder

Bring stock, oil, salt and curry powder to a boil, add couscous, stir and top with a lid and let sit 5 min. then fluff with fork.

1 zucchini (diced)

¼ cup tomato (diced)

1 yellow squash (diced)

2 clove garlic (diced)

½ onion (diced)

1 orange (zest & fruit)

¼ cup Cranrasins or raisins

2 Tablespoons olive oil

1 lime (juice)

Salt & pepper and crushed red pepper flake (pinch of each)

Saute` for 2-3 min and add to couscous. Serve hot or cold.
