
All Around Town Caribbean Shrimp
12 jumbo shrimp,peeled and deveined,tail-on
2 Tbsp olive oil
1 cup chicken stock
1 bell pepper,seeded and sliced
1/2 yellow onion,sliced
Caribbean Marinade
1/4 cup cilantro,chopped
2 Tbsp ginger,chopped
2 Tbsp black pepper
2 Tbsp lemon or lime juice
3 cloves garlic,minced
1 Tbsp allspice
1 Tbsp red curry powder or sauce
2 Tbsp orange juice
Go ahead and make sauce and set aside.Peel and devein shrimp and add to marinade,coating thoroughly.If you have 15 minutes let shrimp marinate a bit.Heat oil in skillet.Add onions and peppers,Then add shrimp,and cook for about two minutes.Add chicken stock,and cook shrimp until nice and pink.Serve over black beans and rice.This is a killer recipe that will make you feel like you are at the beach!!!Enjoy...I also have some chicken cooked the same way that is also very good.
