
Café Du Paris' Eggplant Parisian Gratin
As prepared on FOX6 News Saturday Morning
2 big purple eggplants
1 pre sliced big onion
Parmesan cheese
16oz of bechamel
2 cups tomato sauce
Salt, fresh ground black peper, chopped cilantro, cumin
4 tbps olive oil
Pre-slice eggplant very fine and in a very hot pan sautee your onion and eggplant with salt and pepper.
Once they are almost done put them on a sheet pan and start to make your gratin.
Inside a nice small plate, put onions first, then eggplant, tomato sauce, then parmesan cheese, and stack it one more time without the onion. (eggplant, tomato sauce, parmesan cheese).
Finish your gratin in a preheated oven at 350 for 10 minutes.
