
Chef Bob's Stuffed Chicken Breast
2 tbsp olive oil
1/2 c. diced onion
1/2 c. diced celery
1/2 c. diced carrot
2 cloves minced garlic
1 tsp. fresh, chopped thyme
1 tsp. fresh chopped sage
2 c. bread crumbs
1 egg
1/4 c. blue cheese
2 large chicken breasts, cut thin & pounded
salt & pepper
Saute onion, celery, carrot, garlic, thyme, sage
in olive oil for 3 min. Add bread crumbs, salt & pepper. Cook until
browned. Allow to cool for 15-20 min. Add raw egg into stuffing. Mix. Stuff
chicken breast after seasoning with salt & pepper. Roll chicken breast
& pin with toothpicks. Brown chicken toothpick side down first. Turn &
brown 2-3 min. Bake in 350 degrees for 20-25 min. or until thermometer reads
162 degrees.
