KEY LIME PIE

Serves 12-14

 

INGREDIENTS

 

2 1/2 cups                   Graham Cracker Crumbs

¾ cup                         Melted Butter

1 ¼ cups                    Egg Yolks

7 cups                         Sweet Condensed Milk

2 cups                         Key Lime Juice

 

 

PROCEDURE

 

  1. 1.    Mix graham cracker crumbs and melted butter.
  2. 2.    Line one 10-inch spring form pans with parchment paper. Spray with pan coating generously.
  3. 3.    Place graham cracker mix on the pan.
  4. 4.    Flatten the crust and work the sides of the pan until 2 ¾" high. Make sure that the crumbs are distributed evenly and packed tightly.
  5. 5.    Place crust in a 300 F oven for 5-7 minutes to set.
  6. 6.    In a bowl, mix together all remaining ingredients and pour mixture into crust until it is 2 ½" high in the center.
  7. 7.    Bake at 200 F on low fan for 1 hour 30 minutes. Cover with foil and bake for another 15-25 minutes. Check every 10 minutes after the 35 minute cook time for consistency.  Oven temps vary.
  8. 1.    Remove and cool. Takes 12 hours to set. Cut into 12-14 slices.
