Dark Chocolate & Oat cluster
Makes : 4 servings
2 tablespoons peanut butter
2 tablespoons 1% low-fat milk
1/4 cup semisweet chocolate chips
3/4 cups old-fashion rolled oats
Heat peanut butter, milk and chocolate chips in a sauce pan over low heat 3 minutes or until chips melt.
Stir in oates. Remover from heat.
With a spoon, drop 8 ball-shaped portions on a wax paper -lined baking sheet. Let set in fridge of 10 minutes before serving.

CHOCOLATE DIPPED BANANA BITES
makes one serving
2 tablespoons semisweet chocolate chips
1 small banana, peeled and cut into 1-inch chunks
Place chocolate chips in a small microwave-safe bowl. Microwave on HIGH for 1 minutes. Dip banana pieces halfway in melted chocolate. Serve immediately.
1 banana 190 calories, 4 grams fiber.
RASPBERRIES WITH CHOCOLATE YOGURT MOUSSE
Makes one serving
1/2 cup plain low-fat Greek yogurt
1 tablespoon unsweetened cocoa
1 tablespoon honey
1/2 cup fresh raspberries
Combine yogurt, cocoa and honey in a serving bowl. Stir until blended. Top with raspberries.
170 calories, 4 grams fiber
RICH CHOCOLATE PUDDING
makes 4 servings
2 ounces semisweet chocolate bar, divided
2/3 cup granulated sugar
1/4 cup cornstarch
2 tablespoons unsweetened cocoa powder
1/4 teaspoon salt
2 1/2 cups skim milk
1 teaspoon pure vanilla
1 tablespoon butter
Combine sugar, cornstarch, cocoa and salt in a medium saucepan. Gradually whisk in milk; bring to a boil over medium heat, whisking, 2 minutes. Remove from heat : whisk in vanilla, butter and chopped chocolate. Divide pudding among 4 cups and cool for 30 minutes. Top with chocolate curls and serve.

MERLOT STRAWBERRIES WITH WHIPPED CREAM
1/2 cup merlot
2 tablespoons fresh lemon juice
2 tablespoons honey
1/4 teaspoon vanilla extract
3 cups sliced strawberries
1 cup whipped cream
Bring merlot , juice and honey to a boil in a saucepan over high hear. Remove from heat: stir in vanilla.
Drizzle sauce over sliced berreis. Top with whipped cream.
May substitute balsamic vinegar for the merlot. If using white or red balsamic vinegar there is no need to boil the mix. Simply mix the vinegar, juice, honey and vanilla together and pour over the berries.

CHOCOLATE CAKE IN A MUG
You will need a large coffee mug. Add 4 tablespoons of all purpose flour, 4 tablespoons sugar, 2 tablespoons unsweetened cocoa and mix together in the mug. Beat one egg and add to the mug and mix well. Add 3 tablespoons skim milk, 3 tablespoons melted butter or vegetable oil and mix well. Add one teaspoon vanilla and 3 tablespoons of semisweet chocolate chips and mix well. Place mug in microwave and microwave on HIGH for 3 minutes.
