GEORGE SARRIS' STUFFED TROUT MIX

-JUST UNDER A POUND OF 70/90 SHRIMP
-CUP OF SPINACH
-1/2 WHITE ONION, DICED
-1/4 CAN ARTICHOKES, DICED
-3/8 CUP ROASTED RED PEPPERS, DICED
-1/8 CUP GARLIC
-1/4 CUP OLIVE OIL
-1 TABLESPOON SALT
-1/2 TABLESPOON BLACK PEPPER
-1 1/2 CUPS PANKO


SAUTE ONIONS IN OLIVE OIL. ADD GARLIC, PEPPERS, AND ARTICHOKES. ADD SEASONING AND PANKO. CUT FISH OPEN TO ADD STUFFING. PUT STUFFING IN FISH (OR CHICKEN OR PORK) AND BAKE IN THE OVEN ON 425 FOR ABOUT 12-15 MINUTES. REMOVE SKIN. GARNISH WITH ROASTED RED PEPPERS AND PAPRIKA.
