Baked Salmon with Peach and Avocado Salsa

Baked Salmon with Peach and Avocado Salsa

- 4 (6-8 oz) salmon fillets

- 2 lemons, sliced

- 1/2 teaspoon kosher salt

- 1/2 teaspoon ground pepper

- 1 teaspoon dill, optional

Place salmon fillets on 4 pieces of parchment paper. Sprinkle with salt, pepper and dill if desired. Drizle with olive oil. Wrap each peice in parchment paper. Back at 375 for 15 minutes or until salmon is cooked to desired degree of doneness.

SALSA:

-2 cups peaches, peeled and chopped

-1 1/2 cups avocade, chopped

- 1/2 cup red onion, chopped

- 2 tablespoons sherry vinegar

- 1 tablespoon lemon juice

- 2 tablesppons olive oil

- 1 teaspoon honey

- salt and pepper to taste

Combine first 3 ingredients. Whisk together vinegar and remaining ingredients. Toss with peach mixture. Serve over fish.
