AATC's Apollo Chicken over Tricolor Rotini Pasta

 

4 5 oz boneless,skinless chicken breast,marinated in olive oil,soy,s+p

1 tsp soy sauce

2 Tbsp olive oil

1/2 lb tricolor rotini pasta

1/4 cup red bell peppers

 

Boil pasta for 8 minutes or until al dente.Strain and drizzle with olive oil.Grill or saute chicken in olive oil in pan.Cook for about 3 minutes on each side.Place chicken over pasta and dress with Greek vinaigrette.Serve with salad and you have a fantastic meal!This has been a very popular dish at the café and with catering.Try this and you will love it!
