
Noon Cooking July 19, 2012 - Marinated Grilled Chicken with Watermelon Salsa

Chicken Marinate:
1 tsp dried oregano
1 Tbs olive oil
1 tsp chili powder
¾ tsp ground cumin
½ tsp salt
3 garlic cloves, minced
4 boneless skinless chicken breast
Watermelon Salsa:
2 cups watermelon cut into ½ inch cubes
1 cup peaches cut into ½ inch cubes
¼ cup red onion, finely chopped
2 Tbs cilantro, finely chopped
2 Tbs jalapeno peppers, seeded and finely chopped
1 Tbs lime juice
½ tsp sugar
¼ tsp salt
Combine first 6 ingredients for marinade in a zip lock bag and mix.
Add chicken, distribute marinade to coat all pieces of chicken.
Refrigerate 4 hours, turning occasionally.
Combine all salsa ingredients and stir.
Grill chicken for approximately 5 minutes per side or until cooked.
Serve salsa on top of chicken
To make a complete meal add a rice pilaf!
