Grilled Goat Cheese and Tomato Sandwich
12 slices (2 slices per person) Wheat Bread (we sell our own at East Lake Farmers Market)
2 tubs (6 oz each) Soft Goat Cheese
3 each Tomatoes
1 cup mayonnaise
1 stick (¼ lb) butter, softened or whipped
To taste salt and pepper
Spread each slice of bread with the goat cheese, spread lightly with half of the mayonnaise. .
Slice tomatoes and lay on 6 slices of the bread.
Season with salt and pepper to taste.
Top with the other slices of bread.
Mix the remaining mayonnaise and the butter.
Spread the mayonnaise/butter mixture on the outside of the bread.
Grill on a hot cast iron pan or a panini grill until brown on both sides..
Cut in half and serve.
An interesting variation can be to replace the mayonnaise with thick ranch dressing.
