
Grilled Pizza
1 large wheat pizza crust
10 ounces fresh spinach (don't substitute)
2 tablespoons olive oil
1-2 cloves garlic crushed
5 green onions, chopped
2 ears fresh corn, cooked and cut from cob (may substitute 1 cup frozen or canned corn kernels)
1 can black beans, drained
4 roasted sweet red peppers, peeled, seeded and chopped
4-6 ounces goat cheese
1/2 cup Salsa Senorita brand salsa
sour cream and cilantro for garnish
grilled chicken (optional)
Brush pizza crust with olive oil and garlic
Layer fresh spinach, red peppers, corn and beans
Add green onion
Add cheese
Grill until crust is crisp and cheese is melted
