
Chef Bob's BBQ Chicken Gumbo
½ cup vegetable oil
½ cup flour
Cook over medium heat stirring, to make a brown roux.
1 cup onion chopped
1 cup celery chopped
1 cup okra sliced
1 cup tomato chopped
1 cup zucchini
2 quarts chicken stock
2 cups BBQ chicken
1/2 cup andouille sausage
1 teaspoon red pepper flakes
Salt & pepper
Add all to roux and cook 30 min.
