
Chef Bob's Sweet n Sour Shrimp
For the sauce
3 Tablespoons red wine vinegar
4 Tablespoons ketchup
4 Tablespoons sugar
4 Tablespoons pineapple juice
2 Tablespoons soy sauce
1 teaspoon crushed red pepper flakes
Mix all in a bowl and set aside.
1 Tablespoon corn starch and 2 Tablespoons water. Mix together in a small bowl, set aside.
1 pound of shrimp, peeled and deveined.
1 Tablespoon ginger minced
3 cloves garlic minced
1 cup green onions sliced
1 carrot sliced thin
1 cup bell pepper diced
1 cup pineapple cubed
3 Tablespoons oil
Mix shrimp with ginger, garlic and 1 Tablespoon oil. Heat 2 Tablespoons oil in wok till it just starts to smoke. Add shrimp mixture to wok. Stir fry 2 minutes. Add onion, carrot, bell pepper, and pineapple. Cook 1 minute. Add sauce mixture and bring to a boil. Add cornstarch mixture and bring to a boil. Serve with steamed rice.
