
Cajun Fried Rice
Ingredients
2 cups of rice
1/4 cup of chicken broth
Half a cup of bell peppers
Half a cup of onions
Half a cup of celery
4-5 oz of diced chicken
4 oz of diced smoked sausage
1 cup of shrimp
1 plum tomato (seeds removed and diced)
1/4 cup green onions
5 sprigs of thyme
Salt, pepper, paprika and onion powder to taste
Season chicken and sausage with paprika, olive oil, salt, pepper and onion powder. Heat sauté pan, add olive oil and sauté meat mixture including shrimp, then add trinity (bell peppers, onions, celery). Mix well, add rice and season with salt, pepper and accent. Add two to four tablespoons of ketchup, a teaspoon of tabasco sauce and three tablespoons of chicken stock. Sauté, mix well then remove from heat and top with thyme, chopped tomatoes and green onions.
