
Chef Bob's Fast Caponata
3 Tablespoons olive oil
3 cloves garlic minced
1 onion diced
1 cup celery diced
1 bell pepper diced
1 carrot diced
2 Japanese eggplant diced
1 cup summer squash diced
1 cup or can crushed tomato
1 Tablespoon fennel seed
3 Tablespoons capers
¼ cup apple cider vinegar
¼ cup pine nuts
Salt & pepper
Saute all in olive oil for 3-4 minutes
