
Chef Bob's Squash Croquettes
4 to 5 cups squash (diced)
1 small onion (diced)
1 bell pepper (diced)
2 eggs
1 cup bread crumbs
Salt & pepper
½ cup corn meal
½ cup flour
¼ cup oil for frying
Steam squash, onion, and bell pepper for 10-15 minutes or until squash is softened. Drain for 20 minutes and allow to cool. Add bread crumbs, eggs, salt and pepper. In a separate pan or bowl, Mix flour & cornmeal with salt and pepper. Using an ice cream scoop make patties and roll in flour mixture and fry 2 minutes per side. Serve plain or with ½ cup mayo, juice of 1 lemon, 1 Tablespoon hot sauce.
