
Chef Bob's Hot Apple Chicken Slaw
1 head cabbage (shredded)
1 carrot (shredded)
1 onion sliced
1 bell pepper sliced
1 apple diced
1 cup apple cider vinegar
1 cup sugar
¼ cup olive oil
1 Tablespoon fennel seed
2 cups cooked chicken diced
Salt & Pepper
Toss first 5 ingredients into a large bowl. In a sauce pot add vinegar, sugar, oil, fennel seed and chicken, bring to a boil. Add salt & pepper, toss with remaining ingredients. Serve hot or cold.
