
Potato and Ham Soup

Quick, easy and oh so delicious!
3 ½ c peeled and diced potatoes
1/3 c diced celery
1/3 c finely diced onion
¾ c cooked ham, cut into cubes
3 ½ c chicken broth
Salt and pepper to taste
5 tbs butter
5 tbs all-purpose flour
2 c milk
Cook the potatoes, onions, and ham in chicken stock until tender. This take approximately 10 to 15 minutes depending on the size of potatoes. Stir in salt and pepper to taste.
In a separate pan or skillet, melt butter over medium heat. Whisk in flour and cook stirring constantly until thick, approximately one minute. Slowly stir in the milk; add a little at a time to keep lumps from forming. Cook until this has thicken, about 4 or 5 minutes. Add to potatoes and serve immediately.
Serve with warm potato rolls and enjoy!
This is a hearty soup that will warm you up on a cold night.
