
CHEF BOB'S PUMPKIN PANCAKES
2 C. ALL-PURPOSE FLOUR
4 TBSP BROWN SUGAR
1 TBSP BAKING POWDER
1/2 TSP ALLSPICE
PINCH NUTMEG
1/4 TSP CINNAMON
1/2 TSP. SALT
1 3/4 C. BUTTERMILK
1 STICK OF BUTTER, MELTED
3 EGGS, LIGHTLY BEATEN
1 C. FRESH PUMPKIN, COOKED
1/4 C. COOKING OIL
Mix dry ingredients. Add egg, buttermilk, melted butter, pumpkin & mix together. Cook as you would pancakes with oil.
For cooking pumpkin:
split a whole pumpkin in half. Scoop out pulp & seeds. Lightly oil & bak in oven at 350 degrees for 30-40 min.
