STUFFED POTATO CAKES

2 CUPS COLD (LEFT OVER) MASHED POTATOES
2 EGGS, LIGHTLY BEATEN
1 TABLESPOON ALL PURPOSE FLOUR
1/8 TEASPOON GARLIC POWDER
2 TABLESPOON WHOLE CREAM
1 TABLESPOON VEGETABLE OIL
2 TABLESPOON CHOPPED  CHIVES

6 SMALL STRIPS OF SMOKED CHEESE

PANKO BREAD CRUMBS
VEGETABLE OIL

PLACE MASHED POTATOES IN A BOWL . ADD EGGS, FOUR, GARLIC POWDER, WHOLE CREAM, VEGETABLE OIL AND CHIVES.

MIX WELL.

MAKE POTATO MIXTURE INTO BALLS.
PLACE A STRIP OF SMOKED CHEESE IN CENTER. SLIGHTLY FLATTEN OUT THE POTATO CAKES.
DREDGE IN THE PANKO BREAD CRUMBS. HEAT OIL IN A LARGE SKILLET. PLACE POTATO CAKES IN SKILLET. COOK UNTIL
BROWNED ON BOTH SIDES.
SERVE WITH DILL SOUR CREAM AND GREEN SALAD.
