
Kairos Turkey Stroganoff

1-pound Leftover, Cooked Turkey (White & Dark Meat)
1 Vidalia or Sweet Onion, Diced
1 cup sliced mushrooms
2 pieces uncooked bacon, diced
1 can Cream of Mushroom
2 tablespoons Olive Oil
1 cup Chicken Stock or Chicken Broth
1 cup Sour Cream
1 tablespoon Heavy Cream, or half & half
3 small (or 6 large) Chopped flour tortillas
1clove garlic, minced
Fresh cracked white pepper, to taste
Sea salt, to taste
1 Tablespoon Green onions, sliced
Cranberry Sauce
Preheat a sauté pan, and add olive oil. Add Bacon, Garlic Mushrooms, and Onions. Cook on medium heat, stirring constantly, until Bacon is cooked through and the onions are translucent. Deglaze the pan with Chicken Stock. Add in Cream of Mushroom and Season with sea salt & pepper. Stir in Sour Cream and heavy cream. Simmer on low until it becomes creamy and a thick sauce forms. Stir in Tortillas and simmer 5 to ten minutes. Fold in green onions. Serve with Cranberry Sauce.
