Grilled cheese sandwich with creamy tomato turkey soup

Grilled Cheese Sandwich with Creamy Tomato Turkey Soup recipe from Mark Giorgi with All Around Town Catering:

6 slices of your choice of bread (Today's choice is sundried tomato basil bread)

6 slices of ham (Optional)

6 slices Provolone cheese

6 slices American cheese

3 Tbsp butter

 

1 pound of boneless turkey

8 cups water

1 cup heavy cream

1 Tbsp salt

1 Tbsp pepper

1/2 red onion, diced

2 stalks of celery, diced

Use either 1 12 oz can of shopped tomatoes or 4 fresh roma tomatoes

 

Bring water to a boil, add turkey, salt, pepper, and vegetables. Lower heat to below medium. Let cook for two hours. Taste to make sure seasoning is right. Add cream and let simmer for 10 minutes. Heat half of your butter in pan, add bread until brown on one side. Turn and add a slice of each cheese and a slice of ham. Place bread on top of the other slice. Let brown until desired brownish color is obtained and cheese is melted. Serve with a cup of soup for a really satisfying lunch.
