Artichokes ala Polita
Artichokes à la polita (as it was made in the city--Constantinople that is!)
is a tasty dish made with artichokes, carrots, spring onions, fresh dill,
and of course extra virgin olive oil.
Heat the oil in a large saucepan. Add the the chopped onions and the chopped spring onions.
Sauté for a few minutes.
Add the sliced carrots and sauté for a few minutes. Add the artichokes
And ½ of the dill, salt and pepper and continuously stir for a few minutes.
Pour in the lemon juice. Cover and simmer, Do not stir, but shake the pot occasionally.
Simmer for about 20 minutes. Few minutes before you remove from the heat
sprinkle the remaining dill over the artichokes and the sauce..
Check to see that there is always some liquid in the pot,
adding a little water if necessary.
Serves: 3
NOTE:
It is a Greek tradition to dilute about 1 soupspoon of flour into water and mix with the sauce.
This way the sauce gets thicker.
