Baked Lobster Tail and Filet Mignon served with Garlic Roasted Mashed Potatoes
Baked Lobster Tail (Serves 4)
Ingredients:
3 lobster tails (8-10 ounces each)
1 cup water
2 tablespoons Creole seasoning
1 Tablespoon parsley
1 tablespoon butter, melted
2 tablespoons lemon juice
Pre heat oven to 375 degrees. Split lobster tails in half lengthwise. With cut side up and using scissors, cut along shell to loosen cartilage covering the tail meat from the shell and discard cartilage. Pour Water in a 13 x 9 baking dish; place lobster tails in dish. Combine Creole seasoning and parsley, sprinkle over lobster tail. Drizzle with butter and lemon juice. Baked uncovered at 375 for 20-25 minutes or until meat is firm an opaque. Serve with lemon wedges and melted butter if desired.
Filet Mignon:
4 – 4 oz Fillet Mignon Steaks
2 tablespoons olive oil
1 teaspoon Creole seasoning
Heat two tablespoons of olive oil in an iron skillet over medium high heat. Sprinkle each side of steaks with Creole seasoning. Place two steaks in skillet and grill until crisp. Flip steaks and grill until steaks register 125-130 degrees (for medium rare) 5-10 minutes. Repeat with remaining two steaks. Transfer to plate and cover with foil.
Roasted Garlic Mashed Potatoes:
2 cloves garlic
1 tsp vegetable oil
2 pounds red new potatoes, scrubbed well and quartered
1 tbsp sour cream
½ cup half and half at room temperature
1 bunch green onions, chopped
Coarse salt and ground pepper
Roll garlic gloves in vegetable oil and bake at 400 degrees for 20 minutes. Let garlic cool and chop into small pieces. Set a steamer basket in a large pot. Fill with enough water to come just below basket; bring to a boil. Add potatoes; reduce to a simmer, cover and cook until tender, 15 minutes. Transfer potatoes to a bowl and set aside.
Remove steamer basket; discard water from pot. In same pot, add garlic, sour cream, half and half and green onions and cook 1-2 minutes. Add potatoes and mash coarsely. Season with salt and pepper. Remove from heat; cover. Set aside.
Plate lobster, steak and potato and enjoy!
