Earthfare Zesty Pork Tenderloin

1 Tbs. soy sauce

1 tsp. fresh ginger, minced

1 teaspoon garlic, chopped

1 tsp. Earth Fare extra virgin olive oil

1 lb. pork tenderloin, trimmed and cut crosswise

1/3 cup Earth Fare medium salsa

2 Tbs. apricot or peach preserves

2 Tbs.  fresh parsley, chopped

Combine first 3 ingredients in a bowl.

Cut tenderloin into 12 - ¾ inch thick slices. Flatten each slice with fingertips to a ½-in thickness.

Heat oil in a large nonstick skillet over medium-high heat.. Add pork to pan; spoon soy sauce mixture evenly over pork slices. Cook 3 minutes or until browned. Turn pork over; cook 3 minutes or until done. Remove from pan.

Add salsa and preserves to pan; increase heat to medium-high. Cook 30 seconds or until slightly thick, stirring constantly. Serve pork with salsa mixture, and sprinkle with parsley.

Best served with sautéed spinach or Swiss chard
