BETH K - UAB Nutritionist Dr. Beth Kitchin joined us last week to talk about how acting FAST could make a big difference improving the outcomes of someone having a stroke. FAST stands for Face, Arms, Speech, and Time. While strokes will happen, it is of course best to prevent the stroke in the first place. The number one cause of a stroke is high blood pressure. The USDA/DHHS Dietary Guidelines 2010 say to reduce daily sodium intake to less than 2,300 milligrams (mg) and further reduce intake to 1,500 mg among persons who are 51 and older and those of any age who are African American or have hypertension, diabetes, or chronic kidney disease. The 1,500 mg recommendation applies to about half of the U.S. population, including children, and the majority of adults. So, why the fuss over the salty stuff? Two of the top causes of death in the United States - heart disease and stroke - are directly linked to high blood pressure. One of the causes of high blood pressure is eating too much sodium. Sodium is one of the two minerals that make up salt.
While lowering sodium is a good idea for all of us, it's not an easy task in our American food environment. Most of the sodium in our diets is not coming from the saltshaker. Processed foods are responsible for 75 to 80% of the salt we eat. That means you don't have a lot of control over how much salt you get - unless you cook everything you eat from scratch. Canned foods, frozen dinners, fast food, and restaurant foods are some of the biggest culprits when it comes to high sodium - not the saltshaker. But there are some hidden sources of sodium that may surprise you. Foods with a lot of sodium don't always taste salty - and foods that taste salty aren't always as high as you'd think. But if you want to get serious about lowering the sodium in your diet, start with these steps:
-Read labels for Sodium - Remember, just because a food doesn't taste salty, doesn't mean it is low in sodium. Focus on serving size. If a food label for soup says "Sodium 800 mg" that is for one serving. If the servings per container are two, and you eat the whole can, you are getting 1600 mg! You can look at either the milligrams of sodium or the percentage of your daily value. If the percentage says 25%, that means that one serving of the foods is giving you 25%, or about one fourth, of your daily limit for sodium.
-Look for Lower Sodium Choices: Completely salt free probably won't taste that great. If you can choose foods that are 1/3 to ½ as much salt, you'll find it still tastes good.
-Give it Time: Most people find that after a few weeks of lower sodium, they lose their taste for it and lower salt foods taste better.

With cold and flu season upon us, the transfer of germs and illness in the workplace increases. Better Business Bureau advises business owners to take initiative in preventing the spread of illness. Here are some tips to help protect employees and customers as much as possible: acquire products that ward off germs (hand sanitizers, tissues and disinfectants); advise employees to stay home when sick; enforce good hygiene in the work place by cleaning shared equipment and wiping down common areas regularly; promote flu shots; hold a health fair; and be the example.
