
CHEF CHRIS VIZZINA'S Grilled Chicken Salad with Bob Sykes BBQ sauce with
Sliced cucumbers, grilled red onions, cherry tomatoes, homemade croutons
On romaine lettuce
Serves four to six
3/4 cup Bob Sykes BBQ sauce
3/4 cup light mayonnaise
1 canned chipotle chile peppers finely diced ( MAKE SURE TO WEAR LATEX OR RUBBER GLOVES )
2 lb. of grilled chicken breast cooled and then diced into small pieces
1 small fine diced red onion
1 fine diced red bell pepper
2 celery ribs fine diced
1/4 cup freshly chopped flat leaf parsley or cilantro
Kosher salt
Fresh ground black pepper
Combine Bob Sykes BBQ Sauce with light mayonnaise in a mixing bowl by whisking together.
In a separate mixing bowl add the rest of the ingredients. (you can always add chipotle peppers to taste)
Add BBQ dressing to chicken gradually until you reach the desired consistency
Season with Salt and pepper
Serving suggestions:
Serve on a bed of romaine lettuce
Garnish with freshly sliced cucumbers , grilled red onions , cherry tomatoes
And croutons
Chipotle peppers are smoked and dried jalapeño peppers
