
Chef Bob's Greek style Chicken
2 chicken breast (cooked & diced)
4 Tablespoons olive oil
1 small onion diced
4 cloves garlic, minced
1 cup tomatoes diced
1 cup of olives (rough cut)
½ cup feta
1 Tablespoon fresh thyme leaves
2 teaspoons Greek seasoning
1 lemon (juiced)
Sauté onion and garlic in olive oil for 2 minutes, add tomatoes and cook for 2 minutes. Add olives and fresh thyme. Finish with Feta and lemon juice.
