Greek Style Baked Chicken

 

A traditional Greek and a favorite dish all over the world. 

Kóta Riganáti (chicken with oregano) features the three main Greek ingredients; Extra Virgin Olive Oil, Lemon, and Oregano. A very popular and a delicious dish served at Nabeel's® with Arborio rice and grilled asparagus.

 

Ingredients:

4 Chicken breast about 10-12 oz. each bone-in

½ cup extra virgin olive oil

Juice of 6 lemons

8 asparagus

Plenty of dried Greek oregano

10 garlic cloves cut in half

½ cup water

Salt and pepper to taste

 

Preparation:

Preheat the oven to 350º F. After washing and patting chicken dry

make about 2 or 3 slits in each one  and place the garlic in it. Place skin side up

in a baking pan. Pour the oil over the chicken and squeeze

the lemon juice over the chicken. Pour the water.

Generously season with oregano, salt and pepper.

Bake for about 30 minutes. Baste chicken a few times.

Serve over rice and grilled asparagus.
