FRANKLIN BIGG'S Grilled Chicken with Squash Relish
6 medium chicken breasts
3 TB olive oil
2 each lemons, sliced
2 tsp powdered ginger
2 tsp smoked paprika
2 tsp Mrs. Dash seasoning
1 tsp ground pepper
3 TB greek yogurt
3 TB sliced green onions
1 pt squash relish from PEER Inc., East Lake Farmers Market.
Mix olive oil, lemon slices, powdered ginger, smoked paprika, Mrs. Dash, salt and pepper in a large ziplock bag.
Add chicken breasts and marinate for at least 2 hours in the refrigerator.
Heat a grill pan, or outside grill.
Remove chicken from refigerator ½ hour before grilling.
Grill the chicken breasts on both sides until done.
Allow to rest for 5 minutes covered with foil.
Slice on a diagonal and serve garnished with the squash relish.
