
Chef Bob's Chicken & bok choy with mandarin oranges

1 chicken breast pounded thin (cooked and sliced)
Zest of 1 lemon
Salt and pepper
2 Tablespoons olive oil
1 head bok choy sliced
2 mandrin oranges sectioned
¼ cup tomatoes diced
1 small red onion sliced
2 cloves garlic
¼ cup white wine
1 Tablespoon honey
2 Tablespoons soy sauce
½ teaspoon crushed red pepper
Salt and pepper chicken and grill or pan fry, cool then slice.
Heat pan with oil, add onions and garlic, deglaze with wine. Then add bok choy, oranges, tomatoes, honey and soy. Cook 2 minutes then add chicken.
