Whole Food's Seared Alaskan Cod with a warm spring vinaigrette

4 6 oz. portions cod
12 oz. cherry tomatoes halved
1/2 english cucumber diced
3 spring onions sliced
2 lemons
2 oz. olive oil
1 oz. whit wine
1 tablespoon thyme and dill
Salt and pepper to taste

Season fish with salt and pepper. And sear in hot pan until browned and done. To start vinaigrette heat oil in pan and toss in onions and cucumbers. Sautée until soft and deglaze with wine and lemon. Finally toss in tomatoes and herbs and spoon sauce onto fish.
