Kairos Banana Kobbler
Recipe courtesy of James K Jones from Kairos Kafe
For the bananas:
1 cup unsalted butter
6 large bananas, sliced
1/4 cup sugar
1/4 cup Brown sugar
1 tablespoon pure vanilla extract
For the topping:
1 cup sugar
1 cup buttermilk
1 cup self-rising flour
Preheat oven to 375
Melt the butter in a large skillet. Add the bananas, brown sugar, sugar, & vanilla extract. Cook on medium heat, stirring lightly, until sugar is melted and begins to develop an amber glaze.
Spray a 9X12 casserole dish with cooking spray. In a mixing bowl, whisk together the sugar, buttermilk, and flour for the topping. Pour the mixture evenly over the bottom of the casserole dish. Pour banana mixture evenly over the topping. It should drop to the bottom, but if any bananas remain push them under the mixture with a spoon.
Bake uncovered @ 375 until golden brown (45 minutes - 1 hour).
The best way to serve is with Vanilla Ice Cream. The Flavors and the gooey crust light up your taste buds. You can also serve with fresh whipped cream, or it's good all by itself.
