Chef Donnell Johnson's Shrimp scampi with lemon cream rice
½ LB shrimp
Butter
¼ cup white wine
Teaspoon garlic
Teaspoon fresh lemon juice
salt-and-pepper to taste
Heat sauté pan, add butter, garlic and shrimps sauté 3 -5 minutes, season with Cajun season, salt-and-pepper. Add white wine, lemon juice sauté1-2 minutes. Place shrimp over rice.
Lemon Cream Rice
2 cups cooked rice
½ cup heavy cream
1 tablespoon diced shallots
1 tablespoon fresh lemon juice
1 tablespoon fresh chives
salt-and-pepper to taste
Onion power to taste
Butter
Heat sauté pan, add butter and shallots sauté for one minute, Add cream and lemon juice, cook for 1-2 minutes. Add rice, chive and seasoning, sauté for one minute.
Salad with honey lemon vinaigrette
Romaine lettuce
½ cup honey
¼ cup lemon juice
¼ cup olive oil
