Chef Bob's Orange Chicken
1/4 cup chicken stock
¼ cup soy sauce
1 Tablespoon cornstarch
1 Tablespoon vegetable oil
1 pound chicken (cooked)
2 clove garlic minced
1 small onion sliced
1 cup green beans cut at an angle
1 Tablespoon fresh ginger grated
1 cup tomatoes chopped
3 clementine's zest and sections
1 teaspoon crushed red pepper
Whisk together broth, soy sauce, and cornstarch in a bowl; set aside.
Heat oil in a wok or large skillet over medium-high heat until hot. Add, garlic, onion, ginger, and crushed red pepper, turn heat to high and cook, stirring constantly, add green beans, cook 2 to 3 minutes. Add chicken, clementine sections and tomato, cook 2-3 minutes.
Stir in reserved sauce, orange zest. Cook, stirring constantly, until sauce is thickened, about 2 minutes.
