AATC's Spicy Pesto w/Grilled Chicken and Bowtie Pasta

 

1 cup basil leaves

1/3 cup olive oil

1/4 cup cashews

1 garlic clove

1/4 parmesan cheese

1/4 pico de gallo or salsa

1/4 cup heavy cream

1 cup bowtie pasta

2 grilled chicken breasts

 

Heat water and salt it for pasta.

Blend basil,garlic,olives,cashews,parmesan cheese,and pico de gallo thoroughly.Place in saucepan over low heat.

Drain pasta and heat olive oil in skillet.Stir fry pasta for about 30-45 seconds just to get it a bit crispy,then add pesto sauce.Toss pasta and sauce until coated.Then transfer to plate and serve chicken over it.This is a great dish and very versatile;you can add anything for flavor that you may like.Enjoy!!!
