Mediterranean Shrimp Salad
1/2 c. green olives, pitted and chopped
1/4 c. fresh basil
3 TBSP red onions, finely chopped
3 TBSP lemon juice
1 1/2 TBSP olive oil
1 lb. shrimp, cooked and peeled
8 c. mixed salad greens
1 c. diced plum tomato
1/4 c. flat leaf parsley, chopped
1 tsp. black pepper
French Bread, sliced
1. Place olive, basil, red onion, lemon juice and oil in blender and pulse until well blended.
2. Place 1/2 c. olive mixture in large bowl. Add shrimp and toss until coated. In another bowl, add rest of olive mixture to salad leaves and toss to coat.
3. Divide salad leaves between 4 pats and top with shrimp and tomato. Sprinkle with parsley and pepper. Serve with bread slices.
