Jesse Mitchell of Whole Foods Market's Strawberry Chutney and Sweet Tea Marinated Chicken
1 pint of strawberries, roughly chopped
½ cup Vidalia onion, diced
1-2 tablespoons Pure Alabama Honey
1-2 tablespoons red wine vinegar
Salt and black pepper to taste
Sweet Tea Marinated Chicken:
4 chicken breasts
1-2 cups Milo's sweet tea
3 Beer BBQ Rub to taste
Salt to taste
1-2 tablespoons Solio Family Canola Oil
Stone Hollow Creamery Goat Cheese
Marinate the chicken breasts in sweet tea overnight or for at least 4 hours. After you have removed them from the sweet tea season them with the rub and salt. Warm a pan over medium heat. Then add the canola oil and allow it a moment to warm as well. Next sear the chicken on both sides on medium heat until the chicken reaches an internal temperature of 165 degrees or the juices run clear.
To prepare the chutney cook the strawberries, onion, red wine vinegar, and honey together in a pot over medium heat until it reaches a desired thickness.
Serve the chicken with goat cheese and warm chutney.
